I changed my companion to a friend for a flight next week. Ended up cancelling my flight due to obvious reasons. I will likely end up changing my companion back to my wife.
1. Can I change my companion without ever flying with my current companion?
2. Will this count towards me companion change due to the current events of covid 19?

Yes you can change the companion without ever having traveled with them, but I do suspect it will count as one of your allowed changes. I would make the change, then submit a letter in writing explaining the situation and asking for an adjustment to allow you one extra change this year (if you think you will need it). Asking on the phone for an exception to a policy when you call to make the change will not get you anywhere right now.
