I already have a flight booked with points, and the flight has since become sold out. Am I able to switch the flight to a companion pass booking, without risking losing my seat on the flight all together?

I wouldn't risk it by doing it yourself. This is one that is best solved by calling customer service.

I agree with @PDFelter however if they are unable to help over the phone then I would watch the flight to see if it has a seat open up. if a seat doesn't open before your departure day then I would show up a little earlier on departure day to the airport and they should be able to help at the full service ticket counter since you have up until an hour before the flight to add the companion.
