If I book a round trip flight that results in 4 segments in total (2 outbound and 2 on the return), how many segments qualify as one way flights for Rapid Reward tier status?

you get 1 credit per one way flight so in your case you would get 2 credits
a one way flight is where you fly from your departure airport to your final destination on that confirmation number so for example if you are going from AUS to HOU (as a connection) to MCO with MCO being your final destination even though you take 2 flights you get 1 credit since that's a one way reservation. If you booked AUS to HOU on one reservation and HOU to MCO on another you would get 2 flight credits
so for a RT reservation you get 2 flight credits regardless of the number of stops or layovers

To add on to that with the direction your question was heading, if you desire to get more segments out of the travel, you'd have to book your own connections with one-ways to each airport and separate tickets, which carries some risk with delays and travel plan changes.
