I specifically booked my flight with only one stop based on departure/arrival times, location of stop, and fare. I received a notification that Southwest changed my itinerary completely and added a stop--in Denver no less--so I now have TWO stops.
How come the airline can change my itinerary without refunding a portion of my fare but if I tried to do that, I'd be charged the fare difference??

All airlines change flights all the time. You do have recourse.
Since you were placed on a different flight, you are entitled to contact the airline and tell it that the new flight is unacceptable. You will be allowed to change to any flight on the same routing that has open seats at no additional cost -- regardless of fare charged on those flights.

Normally when this happens you receive an e-mail confirming the change that was made *and* the e-mail says if you want to rebook to a different flight you can at no additional cost, but you have to do it within 72 hours.
