Hi,
if I purchase ticket now example Chicago to New York one-way for January 5th is $75 and Jan 7th is also $75 as of today and down the road I change my mind that instead of 5th Jan I want to fly 7th Jan and new fare for both 5th and 7th Jan is $100 will there be fare difference charge?

Unless the airline changes/cancels your flight, you will ALWAYS be responsible for paying for a change in itinerary - either plus or minus.
You could always buy both tickets. Then cancel the one you won't use, and get a travel fund good for future use.

Example
on 09/28/2021
I paid $100 for my flight schedule DEC 10th from A-to B
on 11/15/2021
my original flight for DEC 10th from A-to B is now selling for $200
I want to change it to DEC 15th which is also selling for $200
will I pay $100 fare difference or since both fares are $200 there will be no difference.

If you paid $100, and the flight you are changing to is $200, you will pay the $100 fare difference.

You would be responsible for any difference in price between what you paid and the new fare.
