Hi! My mom booked a roundtrip flight. She is going to take the first part of the trip to visit me but she is not going to use the second part of her trip to return home as I will be driving her home. Is there a way she can get a refund for the return trip flight? Or credit it to her account?

The short answer is yes. The fare type will determine if she can get an actual refund or if she can get credit for a future flight.
I would follow the contact us link below to call SW; they can help with the cancellation. You can also do it online, but if you don’t feel comfortable doing that, give them a call!

If it was booked as a round-trip, I suggest calling customer service. I am fairly sure that you can only cancel the back half of a round trip ticket online AFTER you have traveled the first half. That was one of the reasons that I started booking a lot of one way tickets on routes where I might have a change.
safe travels, especially on the road trip.
