Our family is taking a domestic flight to Florida from Louisiana and coming with us will is one of our oldest sons’ friends who is 17 years old. Being we will be traveling with this minor and we are not his parents, will we need any specific documentation for him to fly with us?

ID is not required for minors (given your scenario of domestic travel).
Here is what TSA says:
"Children
TSA does not require children under 18 to provide identification when traveling with a companion within the United States. Contact the airline for questions regarding specific ID requirements for travelers under 18." -- source page
Southwest does not require anything extra for the situation you described.
