I bought a ticket for a round trip, but decided I’d like to extend my stay longer (and fly earlier in the month as well) so I want to cancel and book a different flight with the points I get back.
I’m going to look for a flight with a similar price, would the points be enough to cover it? I’m sure I’ll still be paying extra, but I was hoping the points refunded wouldn’t be reduced too much.

You get what you paid in the form of travel credit. So, if you paid $150 for a flight and cancel it, you get $150 in flight credit which never expires.

Go into the flight and use the "change" option and it will show you in cash or points how much it will take, plus or minus, to change to a different day or time. Easy.
