A couple of months ago, I had $300+ in flight credit to use so I used that + cash to purchase Wanna Get Away airfare for my wife and I to CUN in March for her birthday celebration.
Well, I'm gonna achieve Companion Pass by the end of this month (800 points away) so naturally I am going to want to cancel her ticket and rebook her as a companion. If I upgrade her flight to a WGA+ fare beforehand, can I transfer the credit to myself (from her account) after cancelling? Or will some policy prevent me from transferring the cash from her ticket back to me?

First of all congrats on getting the pass.
1) Yes she can upgrade from WGA to WGA+ by paying the higher cost
2) She can then transfer the travel credit to anyone else that has a RR account.
