I have a lot of sympathy for Southwest flight attendants when turbulence pre-empts cabin service and they have to make the entire flight buckled in. Those fold down flight attendant seats don't look half as comfortable as the passenger seats. I know I couldn't do it.

Ironically, after flying all my life, I prefer open seating.
I've flown a lot of times with an assigned seat. On occasion, I board the plane and there is somebody sitting in my seat. I tell them they are in the wrong seat. They get mad, check their boarding pass, check their phone, drag down their carry on from the overhead and go off to find their correct seat in a huff. Sheesh, it makes you feel like you've done something wrong.
When I was younger, I always liked a window seat. Just sit and watch the world go by below. Now that I'm older, I prefer sitting toward the back of the plane in an aisle seat near the lavatory. Yes, mother nature makes the rules.
With Southwest, I check in for the flight 24 hours before. I always get the A group. When the plane boards, I just wait and board with the C group, walk to the back of the plane and get an aisle seat.
On long flights, I do fly first class. What a way to go. Bottomless champagne glass, hot towels, hot nuts, hot meal. You get treated like royalty!

I'm inclined to agree with DancingDavidE. An original part of the Southwest business model was fly one plane, train crew for one plane, maintain and repair one plane. This has contributed to Southwest's success and profitability.
Even thinking about the 737 is not something Southwest should have to do anyway, it's a problem not of their creating.
It's kind of the old fork in the road. What quality of planes would Airbus be making say 20 years from now? It's like a problem with no solution.

Yeah, delivery delay is a problem. I figure wet-lease one plane from ALC and fly with a type-certified pilot and first officer with a Southwest pilot in the jump seat taking notes.
On the flip side, some A321s come with Pratt & Whitney engines which have had problems. Leap would be better.
But, we've seen companies go toxic over the years. When Alan Mulally wasn't selected as CEO of Boeing and he went to Ford, I sold my Boeing stock. You could see what was coming.

Perhaps it is time for Southwest to buy one A321 and fly it on one of its routes for a period of time. I think it burns more fuel, but an E195 doesn't seat enough passengers.
