I'd like to add a few: Red Gravy, downtown CS. Wonderful Italian cuisine. Beast & Brews, far north CS off I-25. Farm to table cuisine and 100 self-serve taps of beer, wine, cider and liquor. The Air Force Academy is a sight to see. Just walking around and under the B-52 bomber was a dream come true for me. Just north of CS in Castle Rock is Honnibrook Meadery. I've had a wide variety and brands of mead, but Honnibrook is hands-down the most flavorful I've ever had. They rotate 24 taps with a variety of flavors. Surrender, the blood orange, is my favorite.
