[asset|aid=240|format=image|formatter=asset|title=RBRiPodLogoSmall.gif|width=180|height=179|resizable=true|align=right]For the third time since I began Red Belly Radio, I am interviewing a celebrity chef. Even if you don’t, I see a trend. Long-time listeners may have heard Tom Colicchio from New York City, or Wolfgang Puck from 560 feet above downtown Dallas, now it is chef Tim Love’s turn. Chef/owner of Lonesome Dove Western Bistro in Fort Worth’s historic Stockyards. Tim was on Top Chef Masters in 2009 and he has also been a judge on Top Chef. Tim is considered the foremost pioneer of urban western cuisine and was at a local Save-A-Lot doing a cooking demonstration and teaching kids about food. So how does this tie in with Southwest Airlines? Easy. I asked him about chili! And since our 37th and Last Chili Cookoff is coming up next week I thought it was time to get you fired up about a nice bowl of red, too.As promised in the podcast, I offer this recipe of Texas’ official dish to any and all. It is my friend, Margaret Nadeau's Recipe. I say she is my friend because she is the type of person you meet once and you feel you’ve known her for years. I have known her for years but you know what I mean. Trust me; she is no slouch when it comes to cooking chili. She is a two-time winner of the Terlingua International Chili Championship and her husband is a Texas State Men’s Champion. I’m sure if you ask her if this is the recipe that she won with she would tell you it is. I’m not actually calling her a liar, but if you were a two-time world champ, would you give away your exact recipe? Step 1 2 lbs. course ground beef (chili grind) 1 TBS Cooking Oil1 TBS Granulated Onion Add ingredients together and lightly brown meat Step 2 Add: 1 Can (8 oz) Tomato Sauce 1 Can Beef Broth Cook for 30 minutes Step 3 Add: 1 TBS Light Chili Powder 2 TBS Dark Chili Powder 1 tsp Garlic Powder ½ tsp Salt ½ TBS Ground Cumin ½ tsp Cayenne Pepper ½ tsp Black Pepper 1 tsp Chicken Granules (or 1 cube) Cook for 1 hour Step 4: Add: 1 TBS Light Chili Powder 1 TBS Dark Chili Powder 1 tsp Paprika ½ TBS Ground Cumin Add water if needed Leave covered and simmer for 30 minute

This is an encore edition from about a year ago. It still works. A lot of people might think the title of this blog sounds a bit like an Agatha Christie novel. Perhaps with enough time and effort it could become my first novel. Realistically? I have my doubts. Lots of story ideas come to me and some are short and some are longer. For this episode, Red Belly Radio[asset|aid=240|format=image|formatter=asset|title=RBRiPodLogoSmall.gif|width=180|height=179|resizable=true|align=right] comes in two (shorter) segments. Of everything to pick from, the first part was recorded on my way to Las Vegas, when I hosted an inflight contest to guess how many bags of peanuts Southwest Airlines gives out in a typical week. Only to be outdone with a wonderful interview with Sofia Proll, a Southwest Flight Attendant. Luckily our paths crossed, and I was able to record the story of a passenger who seems to like averages. Sofia explains how a quick conversation with a couple of passengers could be turning into an iPhone app to track the average number of peanuts per bag.

I don’t mean Red Belly Radio, either. This happened to me on March 17, when our own Brian Lusk, a Manager in Communications, was on Marketplace. Marketplace is a show by American Public Media and airs across the country on National Public Radio. And I had that Hey, I know that guy on the radio moment! They were doing a show called “Meetup, Tweetup, Post, Comment, Sell!” and it was about emerging and interactive media. Since Southwest is a major player in this space with our Nuts About Southwest blog and now our SWALife Interactive site for our Employees, Brian was asked for a comment. The nice people at Marketplace agreed to let me replay this, Give it a listen.

Hear Gary answer the question: “How do you define Leadership?” and “What makes it most difficult to execute that philosophy?” I am also pleased to welcome all the Southwest Airlines employees who are listening to this. Yes, I realize this is the 97th episode of Red Belly Radio and it is some quality podcasting about Southwest Airlines and the stuff that goes on there. So why am I just now welcoming the Employees? Well Red Belly Radio has always been available as a podcast through iTunes, and can be found with a blog on BlogSouthwest.com, but now Red Belly Radio is available on the new homepage of our intranet, SWALife! If you would like to send me a note or suggest a show topic you can always email me at redbellyradio@wnco.com.

Help!!
I am a long time customer and Rapid Rewards member. I just joined the Nuts About Soutwest Blog and I'm enjoying everything. I am in need of some assistance. My Graduate Strategic Management class at Dallas Baptist University has the privilege to analyze Southwest Airlines. This project counts for almost half of our grade this Spring. There is an employee questionnaire and our data will come from the feedback. If anyone out there is willing to help some MBA/MAM graduate students pass, I'd love to hear from you.
Thanks so much in advance. Cynthia Morrison

I have tried unsuccessfully to find the male flight attendant's name that was on the flight 919 last Sunday=Phoenix to Nashville. He was one of the most present people I have met in a long time. Excellent customer service, super great sense of humor. He was the older of the two male attendant's that worked in the front of the plane. I wish I would have asked you your name, but unfortunatley I did not. Perhaps you will read this and get in touch. Thank you again, Lisa Marie Anderson.

Do you remember when they were called “Re-runs?” the trouble with re-runs is that you wound up watching the “Brady Family Christmas” in July. This is a “Best Of” and it is timely. How, you may ask? Because it is about how planes are deiced and with all the winter weather we have had I know I could use a refresher. I'd like to apologize to the people of Philadelphia. As a fourth-generation Texan, and someone who has actually only eaten only one cheesesteak in Philadelphia, I got my facts wrong about what "wit" means. "Thank you for correcting my English." (A line from Trading Places set in Philadelphia.)

This episode of Red Belly Radio is about our Culture—well, one aspect anyway—parties. I recorded this under the bridge between terminals at the Las Vegas airport. Not as troll-like as it sounds, the bridge provided shade for a celebration that Davern, one of our Culture Ambassadors (yes we have those) explains. This is the second half of the interview, the first half was from January 6, 2010. Peter asks Colleen “How do you see Southwest competing going forward?” and “What is the biggest risk you face?”

Thank you SWA for being flexible!
I know my ticketless travel funds are good for one year from the date of purchase (not the flight) and I must rebook and fly before they expire. The other guys would have charged me at least $100 to change my plans. (and I would have had to book another flight before the original flight date passed or I would have lost it all)
Thank you for LUVing my bags!
My family will avoid $150 in checked bag fees on our upcoming trip. 3 bags at $25 each way from the other guys, free at Southwest!

Sorry but I couldn't find any decent way of uploading an image on your blog other than in my profile. My nephew George would tell you :"Dave can fix that". Anyways, George (Handicapped, Down's Syndrome) Just flew back with his new computer after the holidays. On his computer is the opera Die Fleidermaus during which there is an aria entitled "Champagne". We traditionally serve Champagne when the Aria shouts "champagne" Southwest doesn't serve Champagne (like Midwest used to). No problem, we created a new recipe called "Southwest Champagne" George used his computer to take a picture of us enjoying it. I added the captions "When George flys Soutwest Airlines: He always has Southwest Champange. Southwest Campagne Chardonnay Wine Ginger Ale Order an extra glass with ice Mix the wine with the Ginger ale in the extra glass. Enjoy your flight! (tell your uncle to keep his mouth shut while you watch the movie).

In it, you will learn the difference of Centrifugal and Centripetal forces and about the energy required to move 321,300 tons through the air. BTW, that is about four times the weight of the Queen Elizabeth (the ship, not the actual Queen). (Did I really need to point that out?) I hope you enjoy the Physics of Santa and have a wonderful holiday season!
