Assuming your carry-on meets the standard size requirements, there should be no problem bring these. I'd strongly recommend wrapping them in bubble wrap or another cushioning material and bracing them however you can. Then try and make sure your carry-on goes into a bin that is tightly packed so it won't slide around any. That should get them home safely.

Generally speaking, the A group and those that get on before Family Boarding will constitute maybe less than 75 people per flight. With most plans, you're looking at 140-170 seats, so the plane should be less than half full by the time you get on. You should have no problem seating your family - especially if you just head straight to the back. For the layovers, 2 hours is plenty of time assuming no delays. If it is a continuing flight, you will potentially be entering a plane that already has a bunch of people on it, but the same rules apply - it will likely be maybe only half full and you can usually find plenty of open seats at the back. Worst case scenario, you can ask an attendant for assistance getting your family together. They'll do the uncomfortable work of asking folks to make room.
