We are booking a round tip but each of us have enough points to use for only one leg of the flight, can you use points for the outbound flights and pay for the return flight or do you have to book two one way tickets?

You'll each need to purchase two one way tickets, one with points and one with cash, ending up with a total of 4 confirmation numbers.

Booking one way flights is actually my preferred approach, there is no cost difference to book the one way flights versus as a round trip. Book away using those points!
