Sorry if this is a stupid question, but i was trying to book a last-minute flight for Monday. All flights are sold out. Is it worth my continuing to check to see if anything opens up or once sold out, it's typically sold out?

Just like anything else, if someone cancels or changes, it will show available.
Not sure if there is a waiting list inside of the website.

What route? Completely sold out or just no Wanna Get Away fares? If no WGA it's unlikely one would appear. If totally sold out there's still some hope. In my experience some cancelations will occur at 24 hours prior to departure when people are prompted to check-in. Some folks will realize they have a flight booked, but plans changed. Keep checking! You may also want to consider alternate airports if possible.

If the flight is completely sold out I see availability within 24 hours because people will standby on earlier flights and some will miss connections or have delays that would cause a seat to open up on the flight you want.
