Try to keep it untouched now, the terms of the promotion will say something along the lines of "changes invalidate the promotion" so you should keep what you have.
I've heard people using WGA+ or other standby options still qualified in previous contests but making a change in advance to the ticket could knock you out of qualifying.

Confirmation comes when you make the flights to qualify.
You won't be able to add the companion until the day that the pass starts, so if you have a flight on Jan 6th book your own flight now and then as early as possible on Jan 6th you can nominate your companion and then add them to flights.
If the flight is January 6th or early enough in the window that you are nervous, book the flight for the companion now with points to hold the spot but remain refundable, then if something happens and you don't make the qualifying flight you will still be covered. (or buy refundable fare.)
Either way you can book your flights now and add companion later.

If you have the name you can go to the "view points" activity and search to find the confirmation number that used those points; If they have not take the trip, you can go to manage flight and with the name and confirmation number you can cancel the flight and get your points back.

A best practice is to book each leg of your trip individually. The benefit is that if one leg goes down, you can rebook and get your points back or a refund or travel funds (depending on ticket type). You can do that without even having to touch the other leg. You can always reach out to SW via social media or the app chat feature if you are looking to rebook at a cheaper price. They can handle that quickly and can isolate the leg of the trip you are looking to change.

Get the stroller tagged early so that you are ready for boarding with it already having a gate check sticker. Anyone could drop it at the aircraft door once it is tagged. You don’t need to have the baby present as proof. Family boarding is the obvious choice if the B-number is far off. If it’s B-1 then they likely will let them just go with you. Actually if it’s B-anything and you all are A50’s then probably will allow it. Maybe an A-list group of three vacated their positions right before you checked in your group of four. Or booked separately and checked in a few seconds later? Or everyone else flies often and is A-list, but kiddo isn’t?

While there isn't away that I am aware of to see how many open seats are available on a SW flight the one thing I figured out is you can do a flight search for 8 people and if there are 8 or more seats available it will show on the 8 person flight search. Keep in mind this won't take in to account those on standby and anyone who gets reaccommodated on day of travel if your doing this when choosing a flight in advance. You can search the 8 people reservation up until an hour before flight time though so you could get a slight idea of is it 100% full of 99% or less full. Hope this helps Blake
