Just checked into our flight and we got B50-B54 for the five of us, how likely is it that we can sit all in a row (3+2) or at least 2-3 in one row and then the rest of us in the row behind? Debating on whether or not to upgrade if we don’t have a likely chance of sitting together especially because 3 of our passengers are kids.

3+2 in one row is unlikely. 2 in one row and 3 in the row in front of or behind is unlikley.
3 in any row is unlikely depending on plane type. Most likely 2 together somewhere, and 2 others together somewhere else. .
It matters if you are on a plane with 143 seats vs 175 seats. At B50 you'd have 109 people board before you (+any early boarders + family boarders).
Which brings to mind a question: are any of the kids age 6 or less. If so, family boarding would work for at least some of you.

Youngest is 8 so we can’t do family boarding.

This is two adults and three kids?
You can ask the gate agent that you don't meet family boarding criteria but would appreciate some assistance.
2/2/1 may be likely if one of the older kids is okay on their own. And it may work out - head to the back and see what you can get, sometimes people may move a little if you ask nicely, request some help from the flight attendant.
Window seats will start to be taken though even in the back so you may see some 2/2/1 options in adjacent rows or across the aisle from each other.
