At this point on the 31st, the only ways to try to get CP qualifying points this year are:
1) Shopping today
2) Dining today
3) Flying today
Since hotel stays and rent cars use must end today to qualify for this years CP qualifying points,
getting a hotel room for tonight and checking out tomorrow would not count - same with a rent car turned in tomorrow.
To earn 4,000 points, how much would one need to spend at a restaurant? I'd like to daydream about this hypothetical New Year's Eve feast @Kelliesahm would have to enjoy.

I still get nervous while flying, even though I've been flying for years and KNOW there's nothing to be nervous about. Sounds like we share a bit of anxiety 🙂
Noise-canceling headphones is what did the trick for me. A lot of my anxiety came from different noises (usually landing gear), so a pair of good headphones and a calming playlist relieved A LOT of my anxiety.
And, hey, you're flying Southwest - make friends with a Flight Attendant! They fly all the time! I've heard a lot of People focus on the FAs when they get nervous because the FAs' calm demeanor helps them realize everything is normal.
It does get easier with time! Several years ago, I almost refused to fly. Now, my wife and I fly regularly and even did a 17-hour non-stop trip to Hong Kong last year.

@GoodIdea - I was talking about this same idea with a friend over the weekend, asking him how much extra he'd pay for a "first-class" seat on a plane of ONLY "first-class" seats.
I think it's a cool thought exercise, although we did end up in the same place of needing to charge very high rates. I'm really not sure if it'd be more affordable for the Passenger than if they bought first-class on an airline with economy seating. I don't know much about airline accounting, but I assume the money is made on economy seating, which allows first class to be more affordable than if it were a plane full of first class.
All that said, if your scenarios were true, I would absolutely choose Option B - flying "first class" (I know we're only talking about room, not the other amenities) for $150 sounds amazing.
