Just really disappointed in how I was treated, and curious if this has happened to anyone. At a minimum, I think a refund on my 2nd leg of the trip (like 13k points) could be a fix, but she kept insisting I DID something wrong. I was honestly shocked.
Part of the issue might be solved if you can find out what flight you did have a ticket for - hopefully you saved that boarding pass, double-check the flight number and dates that there wasn't accidentally a change in the date being shown when you changed it.
Since it allowed you to upgrade position could it have been one day ahead? Anyway - rule that out first.
@bec102896 's suggestion is also great to confirm that your transaction when through and you weren't still ticketed on the original flight.
I know its a pain, but it will help your case if you can rule out some of these pathways before writing to the company.

No, they must give you the bottles opened without the cap. (Sometimes they do, but that’s rare and not according to policy.)

Yes! The terms are that you get two items of baby gear per kiddo, it doesn't matter which are gate checked and which are curbside, or ticket counter.
The only issue I ran into on this front was when we used a resort check-in one time at Disney they marked us down with having used all our allowances and then when I wanted to check another item at the airport they thought we had used up all of our allowance.

My guess is that this is to maximize the number of people in that section that can put their small personal items up above since there isn't any underseat space for them in the bulkhead row, as well as FA items and safety items taking up some of the space there.
Making it an FAR sounds like a stretch to me, the FAA would have to make separate rules for all different aircraft configurations.

I had A16 even a little better position than usual, but pre-boarded with my mom and I had her take the window while I took the middle. Full flight so not much chance of sitting aisle/window that close to the front.

You can’t link the reservation to your account however there is a manage reservation button on the app you can type in the confirmation number and name then you can view their reservation but you can’t add your RR account to their reservation
if you are traveling with them on that confirmation number you can add your number when you look up the reservation and then you can see it on your account and earn your points for your ticket (they earn their own points)
