Two points to consider:
Be sure your family member differentiates between the need to "self-transfer" with a sliding board or "assistance to transfer" with a hoist. Notify SWA of this need in advance and as soon as you get to the airport.
A small wheelchair that can fit down the aircraft aisle is available at the gate and can be used if you need help getting into your seat. Each gate is also equipped with a Passenger Transfer Kit (PTK), which contains a slide board for "self-transfer" and a transfer sling for "assistance to transfer". The sling is used to lift a customer requiring this type of assistance safely from their wheelchair into the smaller aisle wheelchair and then into the aircraft seat. To make this transfer easier, at least the first one or two rows on most Southwest aircraft are equipped with movable aisle armrests.
Also, consider the length of the flight and the need to use the bathroom. While there is often an in-flight collapsable aisle wheelchair available, you will need to be able to make the transfer in the very small bathroom by yourself or with the help of your own assistant. It is a challenging situation and needs to be considered beforehand. Most fliers with mobility disabilities limit their consumption of fluids beforehand, and use the bathroom immediately before pre-boarding. Disposables and catheters can also come into play if necessary.

While I sympathize with your very real medical condition and the possibility of an anaphylactic episode, I wonder if you read SWA's policy with regard to peanut allergies before booking your ticket:
We don’t serve peanuts on our flights. Instead, depending on flight length, we offer pretzels and a few other complimentary snacks. However, many of the snacks we serve may be packaged in the same facility as peanuts, so we can’t guarantee that they don’t contain peanut particles or oil. We also can’t prevent others from bringing peanuts or peanut products onboard and can’t guarantee that peanut remnants won’t be on the plane floor, seats, or tray tables.
While some airlines may still make an announcement regarding a passenger with peanut allergies, many no longer do...and that trend is growing. It is your responsibility to determine the airline's policy and choose an airline based on that policy. Likewise, it is your responsibility to be prepared for possible exposure...and it sounds like you are diligent in doing this. SWA will allow a passenger with an allergy to pre-board so that extra time can be used to wipe down the tray table, arm rests, etc. to help eliminate potential allergens. Disposable seat and tray table covers can be purchased on Amazon. Gloves and a HEPA mask during the flight will also help.
If I was made aware of a passenger in close proximity with an allergy, I would do everything in my power to help with reducing exposure for that person. In your case, I wouldn't eat my nut bar on the plane. I see nothing wrong with quietly and politely informing your seatmates of your condition. The majority of people are considerate and will comply. Others will only think about themselves and their rights...

Diaper bags used to be allowed as an additional free item, but has quietly gone away on SWA and several other airlines...so I understand the confusion.
These airlines no longer allow diaper bags as a free allowance:

Finding an empty row of three seats is extremely likely during Family Boarding. Be sure to be in the right place (just ask at the counter), and ready to board, after the entire A group boards. In my opinion, and as you already know, you would be wasting your money on Early Bird.

If it were me and the entire family was **not** allowed to board during family boarding...
I would have parent #1 board during family boarding with the 3-year-old. That parent should select an empty row and temporarily place the 3-year-old in the aisle seat and the parent in the window seat. They should then save the middle seat. Most likely, no passenger wants that middle seat, especially when it's next to a young child. Parent #2 boards right behind with the 1-year-old and does the same thing. Hopefully, they might be able to get an entire 3+3 row across the plane.
Let the 12-year-old and 7-year-old board during general boarding in their assigned places. Text the 12-year-old to let him know which row you are in and that the two of them have saved seats waiting for them.
Then, trying not to block the main aisle, you can juggle placement in your six seats so all of the kiddos are happy.

Yes, you can refuse to check your carry-on...but the chances are that neither you nor your carry-on will continue on that flight. You will most probably be deplaned.
Be proactive and always expect that this may happen. I carry a small fabric, grocery-type bag in my carry-on. If I'm asked to check it, I remove all valuables, electronics, medications, etc. and place them in this bag. This bag will easily fit under the seat in front of me.

Just so you don't have an unexpected surprise the day you fly...
Is your dog a therapy dog, an emotional support dog, or a psychiatric service dog? There is a huge difference between the three. Psychiatric service dogs require extensive training and have a vital role. They are recognized as service dogs by the ADA and have certain rights protected by federal law. Therapy dogs and emotional support animals, while also serving very important purposes, do not have these same rights. SWA no longer accepts emotional support animals on flights, regardless of certification. Just in case your goldendoodle is an ESA, he would most likely not be allowed in the cabin without a $95 pet fee and an under-seat carrier.
If your dog is, in fact, a PSA...you're good to go! I hope both of you have a nice flight.

I always used (and still use) Carmel Car and Limo Service in NYC. They have large sedans, minivans, SUVs, and even large vans and Sprinters (but the price rises considerably when using those).
They were always on time, polite, and performed their services exactly as needed.

I've had this happen to me many, many times with other purchases...where it shows up as pending and then just disappears into credit card land.
I'm willing to bet that you will see it as a true charge by next Tuesday morning. I'm noticing that pending charges on my Citi account don't go from pending to hard charges from Friday through Monday. Sometime during Monday night, magic happens, and there they are on Tuesday morning.

There are numerous YouTube videos on different methods for packing a suit in a suitcase. My husband's suits have always arrived in pristine condition when packed accordingly. I use a dry cleaner bag, tissue paper, and three of those shipping air bladders or doubled-up bubble wrap in the folds to avoid wrinkles.

Be aware that you can pack all of your medical supplies in a separate carry-on bag and it won't count as your 1 personal item and 1 carry-on. In other words, you are allowed a third carry-on of medical devices/supplies.
Delays and cancellations seem to be the unfortunate norm these days. Be sure to bring a few emergency low carb snacks to keep your blood sugar steady since most snacks served on the plane are high carb. Nuts are a great choice. Also bring a high carb snack or honey sticks to counter an insulin high. Pack your glucagon injector (and know how to use it) to treat an emergency low. And if you're flying through different time zones, taper your eating/insulin schedule so it isn't altered too much.
Lastly, bring a hard-sided container to act as a sharps container for your used pen needles. Label it to keep TSA safe. Most restrooms in airports have sharp containers if you need to empty it before you fly home.

Semantically, your thinking that SWA "stole" from you is very off-putting. I'm pretty sure that SWA did not want or need your personal belongings.
Your bag could have been:
Misdirected
Accidently taken by another passenger
Intentionally stolen by another passenger
Intentionally stolen by TSA
Had a damaged routing label
Misdirected because the wrong destination was typed in by check-in agent
Unfortunately, all of this happens with all airlines on a daily basis.
If your attitude with CS is heavy with your "stealing" scenario and you mention lawyers, you're not setting yourself up for the results you desire. Just sayin'...
