Yes, that is correct. The Anytime and Business Select Fares are both fully refundable. So, if you purchase one of them and the fare goes down, you can rebook at the lower fare and receive a refund for the difference.
And, as you pointed out, if a Customer cancels the flight (at least 10 minutes before scheduled departure), the flight can be fully refunded.

The 12 reasons are only for US citizens who travel on US passports to Cuba. This policy will not apply to you since you are a citizen of the UK.

Yes, you've got it all right, except for one thing. The funds are valid one year from the date of purchase, not from the date of departure. So, as long as you use those funds toward another trip that will be completed before the expiration date, you're good!

That is correct - travel credit stays with the individual person, and that person can use the funds toward a future trip. Funds are always valid for one year from the original date of purchase. So, if you bought your tickets on February 1, 2017, those funds would be valid until February 1, 2018 (and travel must be completed, not simply booked, by that date).

We do our best to educate Customers about how to use their travel funds, and how the expiration date works. We send an email when a flight is booked that clearly states the expiration date (one year from the date of purchase) and then we send an email after any subsequent changes that also states the expiration date of the reservation. I'm sorry that this has been a disappointing situation for you. Many of our Customers are thrilled to know that they've got an entire year to use up any travel funds under their name, as we've got one of the most flexible policies in the industry.
