I have been on flights where an announcement was made requesting passengers to refrain from eating peanuts if possible. It's unfortunate such an announcement was not made for you. Unfortunately, it's clear from the other response you have received that some people don't care about others, but I would hope most people would have a heart and understand. Having said that, it's certainly not going to be possible to eliminate all traces of nuts from a plane and you should travel prepared for the worst. Is it oversized or not? If so, then a charge is to be expected.
One interpretation of the policy could be read as one sporting goods item is allowed so I can understand where the agent was coming from. I can also understand where you could believe 2 sporting items would be allowed. Policy below with bold added by me.
Any of the items listed below may be checked in substitution of one piece of the free checked baggage allowance for you at no charge on a one-item-for-one-bag basis. If the item of sporting equipment exceeds 50 pounds in weight or 62 inches in size (outside length plus height plus width), excess weight and size charges may apply.

Are you saying you used points to pay for a flight that was cancelled by Southwest? I'm guessing this occurred during the Christmas holiday. If that's the case, did you submit a request for a refund? That was my situation and Southwest processed the refund after I submitted the request. At this point you will want to write Southwest and explain you did not receive a refund of the points used to purchase the flight. Provide the confirmation number and passenger name(s). I wouldn't give up hope on the lost item report, it seems like that process can take quite a bit of time. It's good and bad that you had so much identifying information in the bag. Good if the bag gets into the lost and found system, that should make it easy to match with you. Thinking of the alternative, you may want to freeze your credit or obtain some basic ID theft monitoring for a little while just to be safe. Good luck!

I see no issues with gate checking it, but would suggest you inquire with the agent at the check-in ticket counter to get their opinion as they may have thoughts about it after seeing the stroller in person. You will also want to allow extra time to get through security as TSA will want to do their inspection.

You don't go through customs in the United States when departing the United States so you will check bags at COS and see them again at your final destination. On the return you will get your bags and clear customs at your first stop in the United States. You will then recheck your bags after customs and get them again at COS.

It sounds like you booked through Southwest Vacations which is not part of, nor owned/operated by Southwest Airlines. For questions about refunds you will need to work with Southwest Vacations. If you entered the info incorrectly online I'm not sure what recourse you have here as the error was your making and was not noticed until the last minute. If you called Southwest Vacations to make the reservation then perhaps you have some standing, but not noticing the mistake until the last mute creates some difficulty. If it truly was an error created by Southwest Vacations you may be able to dispute the issue through your credit card.
I would not agree either Southwest Airlines nor Southwest Vacations is "struggling to stay in business", but that's not really relevant to the matter. Your issue here is with Southwest Vacations and I hope they work with you to resolve it.

You did not state the reason for the delayed flight which is going to make a very big difference in whether there will be any compensation for the delay and resulting expenses. Without a reason for the delay you aren't going to be able to pursue this further. Also, this might not have been an oversell situation if you showed up late, past the boarding deadline. The seats may have been given to standby passengers when it appeared you were not going to be taking the flight. Your best bet in situations like this is travel insurance or utilizing the trip delay coverage provided by many credit cards. Assuming you did not purchase travel insurance I would look into any coverage provided by your credit card if you used one to pay for the flights.
